Luscious Lemon Drizzle Muffins…

Today I want to zest up my muffins…hope you enjoy them!

As soon as you add the grated lemon, the citrus zing hits you!

Ingredients:

  • 2 eggs, beaten
  • 100g golden caster sugar
  • 240ml milk
  • 100ml sunflower oil
  • 300g plain flour
  • 3tsp baking powder
  • Β Β½ tsp salt
  • 4 lemons-grated rind
  • Icing sugar

Fill two thirds full…can you see the lemon?

Prepare the drizzle topping whilst the muffins are cooling.

Method:

  1. Preheat oven to 200C and line muffin tray with paper muffin cases.
  2. Beat the eggs in a mixing bowl, add the oil and milk, then whisk in the sugar, until dissolved.
  3. Sift in the flour, baking powder, salt, grated lemon rind and then roughly mix.
  4. Spoon the mixture into muffin cases; two thirds full.
  5. Bake for 25-30 minutes until well risen and golden.
  6. Leave to cool.
  7. Make the lemon drizzle topping by mixing icing sugar and lemon juice.
